Donegal's coffee school, run by coffee people
Who it's for
Made for beginners, home brewers and working baristas.
Most courses teach theory in a classroom. Ours is hands-on at the machine, in small groups, on the same equipment you'll use at work or at home — so you leave with muscle memory, not just notes.
Starting out
Nail espresso, milk and machine care before your first shift. Walk in nervous, walk out job-ready.
Home enthusiasts
Get café-quality coffee from your own machine. Bring your questions — and your machine's quirks.
Cafés & teams
Train your whole team at our college or in-house. Consistent drinks, fewer wasted shots, happier regulars.

Every skill that matters.
Coffee & origins
Arabica vs Robusta, single origin vs blend, and how roast affects taste — using beans roasted for us on order.
Espresso extraction
Dial in grind, dose and time. Pull shots that taste as good as they look, every time.
Grinder & machine mastery
Operate, adjust and maintain a real espresso setup — and keep it hygienic and running sweet.
Milk steaming & latte art
Silky microfoam with any milk, dairy or alternative. Pour your first heart, then your first rosetta.
The full drinks menu
Espresso, americano, cappuccino, flat white, latte, macchiato — built to the ratios customers expect.
Filter & brew methods
Pour-over, cafetière, AeroPress: when to use them and how to nail each one.
Hatter's Coffee College
Donegal's first dedicated Barista College — and still its friendliest.
We were the first company to launch a dedicated Barista College in Donegal, and we've trained many new baristas on our courses or in-house. We get the coffee roasted for us on order — so you learn on beans that are days off the roaster, not months in a warehouse.
Hatter's Coffee College
In-person courses at our warehouse — the first dedicated Barista College in the county.

Training questions, answered
Do I need any experience?+
None at all. The Foundation course assumes you're starting from zero — you'll be pulling shots under guidance from the first hour.
Where does the training happen?+
At our warehouse in Dromore, Killygordon, Donegal — home of Hatter's Coffee College, the first dedicated Barista College in the county. Team training can also run in-house at your business, and we run pop-up courses in different locations from time to time.
When are the next course dates?+
New dates are announced on our Instagram first — and by email to everyone who registers their interest here. Courses tend to fill quickly once dates drop.
Can we train our whole team?+
Yes — we run in-house training for cafés and businesses. Register your interest, mention your team size, and we'll build the session around you.
Can I buy a course as a gift?+
Absolutely — gift vouchers are available for the coffee obsessive in your life. Choose "Gift voucher" in the form and we'll sort the details with you.
